In HK, pork is one of the two highest consumption meat according to a research conducted by HKU in 2018.
Would pork work well with rendang? Pork collar or pork scotch fillet is usually used to make Cantonese char siu (BBQ pork) as it allows for slow cooking time. Hence, we then decided to use this cut of pork for our rendang.
Our rendang pork was a hit. My boys love it, just as much as they love their char siu.
